More Appetizers!


Again, appetizers are a great way to introduce family, friends,guest and yourself to vegan dishes without being to blatantly pushy about it.

Another great, and very easy app are pinwheels.

Start with large flour tortillas. You can use either plain, spinach, wheat, tomato or a combination for color variation. Remember, color always makes food more desirable and add to the flavor. You want to make it look great. Presentation is key!

Next, find dairy free vegan cream cheese substitute. Tofutti brand is great. Taste great, and I've served it to many non-vegans without question. Let the cream cheese substitute sit out at room temperature for about 20 minutes prior to using to assure ease in spreading.

Pic up some vegan lunch meet. Deli style ham, turkey, or salami substitutes are usually available in the produce section of your local grocer. If you can't find it, you can always substitute the vegan meat replacement with thinly sliced vegetables of choice, chopped walnuts or both.

Next, take one bunch of scallions (small green onions), wash, cut the tips off and slice thin or chop fine.

With spatula or blunt knife, spread cream cheese substitute over one side of soft tortilla covering completely.

Add meat replacement (or other ingredients) in thin layers, completely covering cream cheese other than leaving one half of the edge, about 1/4 inch exposed. Add chopped scallions, arranging them as you would toppings on a pizza.

Start rolling towards edge where creams cheese substitute is exposed, keeping the roll nice and tight as you go. Go slow to make sure the tortilla rolls up as tight as possible without tearing the shell.

The exposed edge will adhere to the outside of the shell once rolled up complete allowing it to stay rolled up.

With sharp knife, start at one end of the roll and cut into 1/2 inch pieces. Set the pieces on serving place, exposing the sliced side, wrap with cellophane or cover and refrigerate for at least 20 minutes.

You're ready to serve a great looking, great tasting vegan appetizer.
